Description

This veggie packed soup is a great way to get some greens. Asparagus is a great source of nutrients including fiber, folate and vitamins A, C and K.

Directions

Step 1

Heat the oil in a large soup pot. Add the onion and leek and saute until golden. add chopped celery sauté for 2 minutes. Add the asparagus and vegetable broth. bring to a slow boil, then cover, lower the heat, and simmer gently until the asparagus is tender (about 15 minutes).

 

Step 2

Stir in the peas and dill and continue to simmer briefly until the peas are tender.

 

Step 3

Blend ingredients with immersion blender, food processor, or blender until smoothly pureed.

 

Step 4

Step 5

Garnish with steam asparagus and dill

Ingredients

About 4 servings.

1 pound asparagus
1 leek
2 sticks of celery
1 tablespoon coconut oil or olive oil
1 large onion, chopped
8 ounces frozen green peas
1 cup chopped fresh dill, plus more for garnish
2-3 cups vegetable broth salt and pepper to taste
